I can’t find php.ini and when I try doing it in .htaccess it gives 500 error
You need to consider VPS…

The symlink function is disabled for security reasons. Since most functions in the disable_functions list are put there for similar reasons, we can’t let you edit that configuration parameter.
As with all web hosting services, the php.ini file is placed somewhere in the server where it’s not accessible. But on premium hosting, you do get a PHP config editor where you can choose which functions are blocked.
