On my new website there is a cookie called “__test” that I didn’t add myself. What is it used for and should I remove it? If so, how?

This is what it’s used for:
There isn’t really a simple way to remove it. But if your code does remove that cookie, it blocks visitors from accessing your website until they generate a new __test cookie.
